For the Tortilla Chips

Prepare the Tortillas
Stack the corn tortillas and cut them into triangles. You can cut each tortilla into 6 wedges for bite-sized chips.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of tortilla in; it should sizzle immediately.

Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches. Fry them for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Season the Chips
While the chips are still hot, sprinkle salt over them to taste.

Mix the Salsa
In a large mixing bowl, combine the diced tomatoes, onion, jalapeño, and cilantro. Squeeze the juice of the lime over the mixture.

Season the Salsa
Add salt to the salsa and mix well to combine all flavors. Adjust the seasoning if necessary.

Chill the Salsa
Let the salsa sit for at least 15 minutes at room temperature to allow the flavors to meld. You can also refrigerate it if you prefer a colder salsa.
