Method
Chips Preparation
- 1
Cut and Fry Tortillas
Begin by cutting each corn tortilla into 6 triangles to create chips. Heat the vegetable oil in a deep pan over medium heat.
- 2
Fry Chips
Once the oil is hot, carefully add the tortilla triangles in batches, frying them until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.
- 3
Season Chips
While still warm, sprinkle the chips with salt to taste and set them aside.
Queso Fundido Preparation
- 4
Prepare Chorizo
In a skillet over medium heat, add the chorizo and cook until browned and fully cooked, about 5-7 minutes. Break it apart with a spatula as it cooks.
- 5
Prepare Vegetables
While the chorizo is cooking, finely chop the garlic, jalapeño pepper, and green onions. Set aside.
- 6
- 7
Melt Cheese
Reduce the heat to low and add both Chihuahua and Monterey Jack cheese to the skillet. Stir continuously until the cheese is melted and creamy.
- 8
Add Tomatoes and Season
Stir in the diced tomatoes, chopped green onions, cilantro, salt, and black pepper. Mix well and let it warm through for about 2 minutes.
- 9
Serve
Transfer the queso fundido to a serving dish and serve immediately with the freshly made tortilla chips on the side.
