Spring Rolls

Prepare vegetables

Thinly shred the cabbage, julienne or grate the carrot, finely chop mushrooms, slice scallions, and rinse/drain the bean sprouts. Mince the garlic and ginger. Pat ingredients dry where possible to reduce excess moisture.

Cook filling

Heat a 10–12 inch skillet or wok over medium-high heat. Add 1 teaspoon neutral oil, then add the minced garlic and ginger and stir for 15–20 seconds until fragrant. Add mushrooms and cook 1–2 minutes until they begin to soften. Add shredded cabbage, carrot, and bean sprouts and stir-fry 3–4 minutes until vegetables are tender-crisp and most moisture has evaporated. Stir in scallions, soy sauce, sesame oil, salt, and pepper. Mix cornstarch with 1 teaspoon water to make a slurry, add to the pan, and cook 30–60 seconds to bind the filling. Taste and adjust seasoning. Transfer filling to a bowl and let cool to room temperature (about 10 minutes).

Assemble rolls

Lay one spring roll wrapper on a clean work surface in diamond orientation (one corner toward you). Place about 2–3 tablespoons of cooled filling near the corner closest to you, forming a compact log about 3 inches long. Fold the corner over the filling, tuck in the left and right sides snugly, then roll away from you to within 1/2 inch of the far corner. Mix the flour and 2 teaspoons water into a smooth paste. Brush a thin line of the flour paste along the far corner and finish rolling to seal. Repeat with remaining wrappers and filling to make 6 rolls (they will yield 3 larger pieces if you double-wrap; adjust if you want exactly 3 pieces—see note).

Optional double-wrap for crispness

If you want a thicker, restaurant-style roll (and to produce exactly 3 pieces), use two wrappers per roll: place one wrapper, add filling, then place a second wrapper on top before folding and sealing. This recipe lists 6 wrappers to make 3 double-wrapped rolls.

Heat oil

Pour about 1 cup neutral oil into a heavy skillet (or enough to achieve 1/2 inch depth) and heat over medium-high until the oil reaches 350°F (175°C) or a small piece of wrapper sizzles immediately when added. If you don't have a thermometer, test by dropping a small scrap of wrapper in — it should turn golden in about 30–40 seconds.

Fry rolls

Carefully add 2–3 spring rolls to the hot oil without overcrowding. Fry for 2–3 minutes per side, turning occasionally with tongs, until evenly golden brown and crisp. Adjust heat as needed to avoid burning; maintain oil temperature around 325–350°F. Transfer fried rolls to a wire rack or paper towel-lined plate to drain. Keep warm in a low oven (200°F / 95°C) if needed while frying the rest.

Serve

Let rolls rest 1–2 minutes, then slice each roll in half on the diagonal if desired (this yields 6 halves). Serve 3 pieces per order (if double-wrapped, serve the 3 whole rolls) with the special dipping sauce and lime wedges/garnish.

Special Dipping Sauce

Whisk together hoisin, soy sauce, rice vinegar, sugar, water, optional chili garlic sauce, and sesame oil in a small bowl until smooth and sugar dissolves. Taste and adjust: add more vinegar for tang, more sugar for sweetness, or more chili for heat. Transfer to a small serving dish.

Garnish

Arrange lime wedges and cilantro leaves on the plate for serving. Guests can squeeze lime over the rolls if desired.
