Prepare the sushi rice

Rinse 0.75 cups short-grain sushi rice under cold running water until the water runs nearly clear (about 6–8 rinses). Drain briefly. Combine rinsed rice and 0.85 cups water in a small pot with a tight-fitting lid. Let rice soak 20–30 minutes (optional but recommended), then bring to a gentle boil over medium heat. Once boiling, reduce to the lowest heat, cover, and simmer 12 minutes. Remove from heat and let rest, covered, for 10 minutes.

Season the rice

While the rice cooks, warm 1.5 tbs rice vinegar, 0.5 tsp sugar, and 0.25 tsp fine sea salt in a small bowl or saucepan just until sugar dissolves; do not boil. Transfer the cooked rice to a shallow bowl or wooden sushi-oke if available. Gently fold the vinegar mixture into the rice with a rice paddle or spatula using slicing motions to avoid crushing the grains. Fan the rice as you fold to cool it to near room temperature (this gives glossy, separate grains). Keep the rice slightly warm but not hot.

Prepare fish and accompaniments

Ensure the 5 pieces of sashimi-grade fish are properly refrigerated and dry. Pat each slice lightly with paper towel to remove excess moisture. Place a small dish of soy sauce, the wasabi (1 tsp), and pickled ginger (1 tbs) on the serving tray. If using, lightly toast 0.5 tsp sesame seeds in a dry pan over low heat for 1–2 minutes until fragrant.

Form nigiri-style sushi (optional) or serve as sashimi

Option A — Nigiri-style (recommended for appetizer): Wet your hands with a water-vinegar mix (1 cup water + 1 tsp rice vinegar) to prevent sticking. Take about 2 tablespoons (roughly 24–28 g) of seasoned sushi rice and shape it into an oblong by gently pressing and molding with your fingers (do not compact too tightly). Lightly smear a small dab of wasabi (about 1/8 tsp) on one side of each fish slice. Place the fish, wasabi-side down, over the rice and press gently so the fish adheres to the rice. Repeat to make 5 nigiri pieces. Option B — Sashimi: If serving as plain sashimi, arrange the 5 fish slices on a chilled plate with shiso or microgreens and serve rice on the side or omit rice entirely.

Plate and garnish

Arrange the 5 pieces attractively on a chilled plate. Add pickled ginger and a small dish of soy sauce for dipping. Garnish each piece with a tiny sprinkle of toasted sesame seeds (optional) and a shiso leaf or a small tuft of microgreens. If nigiri, place the garnish beside or lightly atop the fish as appropriate.

Serve

Serve immediately at cool room temperature. Advise guests to dip fish side (not rice) into soy sauce to avoid oversoaking the rice. Use wasabi and pickled ginger to complement flavors.
