    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.

    Cook the Sushi Rice

    In a medium pot, combine the rinsed sushi rice and water. Bring to a boil over medium heat, then reduce to low and cover. Let it simmer for about 20 minutes or until all the water is absorbed.

    Season the Sushi Rice

    Once the rice is cooked, remove it from heat and let it sit, covered, for 10 minutes. In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds until sugar and salt dissolve. Gently fold this mixture into the rice using a wooden spatula.

    Prepare the Fillings

    While the rice is cooling, slice the cucumber and avocado into thin strips. If using whole crab meat, shred it into smaller pieces.

    Assemble the Sushi Rolls

    Lay a nori sheet on a bamboo sushi mat. Wet your hands to prevent sticking, and take a handful of sushi rice (about 1/4 of the total). Spread it evenly over the nori, leaving about 1 inch at the top edge. Layer the cucumber, avocado, and crab meat on top of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Roll until you reach the edge of the nori. Use a little water to seal the edge of the nori.

    Cut the Sushi Rolls

    Using a sharp knife, slice the rolled sushi into 6-8 pieces. Wet the knife with water between cuts to prevent sticking.

    Serve the sushi rolls on a plate with soy sauce, wasabi, and pickled ginger on the side.
