Ingredients for Oak Farm Lodi Chardonnay

Method

Directions for Making Oak Farm Lodi Chardonnay

  1. 1

    Harvesting Grapes

Select ripe Chardonnay grapes. Ensure they are free from rot and pests.

  2. 2

    Sanitizing Equipment

Dissolve 0.5g of sulfur dioxide in 500ml of water. Use this solution to sanitize all equipment, including fermentation vessels and tools.

  3. 3

    Crushing and Pressing

Crush the harvested grapes to release the juice. Press the crushed grapes to extract as much juice as possible.

  4. 4

    Fermentation Process

Transfer the grape juice into a sanitized fermentation vessel. Add the yeast packet to initiate fermentation. Seal the vessel with an airlock to allow gases to escape.

  5. 5

    Monitoring Fermentation

Keep the fermentation vessel in a cool, dark place. Monitor the fermentation process for about 2-3 weeks, checking the specific gravity regularly.

  6. 6

    Malolactic Fermentation

After primary fermentation is complete, add the malolactic bacteria to soften the acidity of the wine. Allow this process to occur for another 1-2 weeks.

  7. 7

    Adding Oak Chips

After malolactic fermentation, add 50g of oak chips to the wine for aging. This will impart the desired oak flavor.

  8. 8

    Aging

Allow the wine to age with the oak chips for at least 3-6 months. Taste periodically to check for the desired flavor profile.

  9. 9

    Bottling

Once the aging process is complete, siphon the wine into sanitized bottles. Cork the bottles and store them in a cool, dark place.
