Mashing
In a large pot, heat 5 gallons of water to 165°F (74°C). Add the Pale Malt, Crystal Malt, and Carapils Malt to the water. Stir thoroughly and maintain the temperature at 150°F (65°C) for 60 minutes.

Sparging
After mashing, raise the temperature of the mash to 170°F (77°C). Sparge the grains with enough water to collect about 6 gallons of wort.

Boiling
Bring the wort to a boil. Once boiling, add the Centennial hops and boil for 60 minutes. With 15 minutes remaining, add the Amarillo hops.

Cooling
After the boil, cool the wort quickly to 70°F (21°C) using a wort chiller or an ice bath.

Fermentation
Transfer the cooled wort to a sanitized fermenter. Pitch the yeast into the wort and seal the fermenter with an airlock. Allow it to ferment for 1-2 weeks at around 68°F (20°C).
