Prepare the Mussels

Rinse the mussels under cold water, removing any beards or debris. Discard any mussels that are open and do not close when tapped.

Cook the Aromatics

In a large pot, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add Broth and Saffron

Pour in the seafood broth and add the saffron threads. Bring the mixture to a gentle simmer.

Combine Ingredients

Stir in the sun-dried tomatoes and capers. Then, add the cleaned mussels to the pot. Cover and cook for 5-7 minutes, or until the mussels have opened.

Season with salt and black pepper to taste. Garnish with fresh parsley. Serve with toasted baguette on the side.
