Preparation
Prepare the Confit Tomatoes
Preheat your oven to 375°F (190°C). In a baking dish, combine cherry tomatoes, olive oil, balsamic vinegar, salt, black pepper, and fresh basil leaves. Toss to coat the tomatoes evenly.
Bake the Tomatoes
Roast the tomatoes in the preheated oven for about 25-30 minutes, or until they are soft and blistered.
Prepare the Goat Cheese
While the tomatoes are roasting, place the goat cheese in a small baking dish or oven-safe ramekin. Once the tomatoes are nearly done, place the goat cheese in the oven to bake for about 10-15 minutes, or until it is warm and slightly melty.
Toast the Bread
While the goat cheese is baking, toast the multigrain bread slices until golden brown.
Serve
Remove the goat cheese and tomatoes from the oven. Serve the warm goat cheese with the confit tomatoes on top and the toasted multigrain bread points on the side.
