    Prepare glass

    Chill a coupe or Nick & Nora glass by placing it in the freezer for 5–10 minutes or filling it with ice water while you prepare the cocktail.

    Build and shake

    In a cocktail shaker, add the gin (2 oz), elderflower liqueur (0.5 oz), fresh lemon juice (0.75 oz), simple syrup (0.5 oz), and 2 dashes of Angostura bitters. Fill the shaker with ice (about 1 cup) until almost full. Secure the lid and shake vigorously for 10–15 seconds until well chilled (exterior of shaker becomes cold).

    Fine strain

    Discard the ice or water from the chilled glass. Double-strain the shaken mixture into the chilled glass using both the shaker strainer and a fine mesh strainer to remove ice shards and pulp for a smooth texture.

    Top with sparkling wine

    Carefully top the cocktail with approximately 2 oz of dry sparkling wine or Champagne. Pour gently down the side of the glass to preserve bubbles and avoid excessive foam.

    Garnish and serve

    Express the oils of a lemon twist over the surface of the drink by holding the twist skin-side down, bending it briefly over the cocktail, then rub the rim of the glass with the twist and drop it into the drink as a garnish. Serve immediately.
