Dumpling filling

    Prepare cabbage

    Place shredded Napa cabbage in a bowl, sprinkle with a pinch of salt, toss and let sit 5 minutes. Squeeze out as much liquid as possible using your hands or a clean kitchen towel and transfer cabbage to a mixing bowl.

    To the cabbage, add ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, Shaoxing wine, salt, white pepper, and cornstarch. Mix thoroughly with a spoon or by hand until the mixture becomes slightly sticky and well combined, about 1–2 minutes. Cover and refrigerate while you prepare wrappers.

Wrappers & assembly

    Set up an assembly station with a small bowl of water (for sealing) and a lined tray. Place one wonton wrapper on a clean surface. Spoon about 1 tablespoon (roughly 15 g) of filling into the center of the wrapper. Do not overfill.

    Dip your finger in water and moisten the edge of the wrapper. Fold the wrapper in half to create a half-moon, pressing to seal the edges and expel air. Optional: create small pleats along the sealed edge for a traditional look and extra strength.

    Repeat until you have 6 filled potstickers. Keep finished potstickers on a lightly floured/tray and cover lightly with a towel so they do not dry out.

Cooking (pan-fry then steam)

    Heat a nonstick or cast-iron skillet over medium-high heat. Add 1 tablespoon neutral oil and swirl to coat. Arrange potstickers in the pan flat-side down with slight space between them.

    Fry undisturbed until bottoms are golden brown, 2–3 minutes. Reduce heat to medium-low.

    Carefully pour 1/4 cup water into the pan (it will sizzle). Immediately cover with a tight-fitting lid and steam for 4–5 minutes, or until the pork inside reaches 70–75°C (160–165°F) and wrappers are tender.

    Remove lid and continue cooking 30–60 seconds to re-crisp the bottoms. Transfer potstickers to a serving plate.

Sweet sesame soy dipping sauce

    While potstickers cook, mix 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp honey, 1/2 tsp sesame oil, toasted sesame seeds, and red pepper flakes in a small bowl until honey dissolves.

    Taste and adjust seasoning: add a bit more honey for sweetness or a few drops of water to mellow the soy if too strong.

Finish & serve

    Arrange 6 potstickers on a plate. Sprinkle sliced green onion over potstickers and serve immediately with the sweet sesame soy sauce on the side for dipping.
