    Prepare potatoes

    Peel (optional) and cut the potatoes into 1-inch (2.5 cm) cubes so they cook evenly. Rinse the cut potatoes under cold water to remove excess starch and pat dry with a towel.

    Par-cook potatoes (optional, speeds cooking)

    Place the potato cubes in a pot of salted water and bring to a gentle boil. Cook for 6–8 minutes until just tender but not falling apart. Drain and set aside. Alternatively, you can skip this step and cook potatoes directly in the curry for a longer simmer (15–20 minutes).

    Bloom whole spices

    Heat a large deep skillet or medium saucepan over medium heat. Add the vegetable oil. When hot, add the mustard seeds and cumin seeds. Let them sizzle and pop for about 20–30 seconds, stirring so they don't burn.

    Sauté aromatics

    Add the finely chopped onion to the pan and sauté for 6–8 minutes until softened and translucent, stirring occasionally. Add the minced garlic and grated ginger and cook 1–2 minutes more until fragrant.

    Add powdered spices

    Stir in the turmeric, ground coriander, ground cumin, and chili powder. Cook the spices with the aromatics for 30–60 seconds, stirring constantly so they don't scorch. Add the tomato paste and cook 1–2 minutes to deepen its flavor.

    Build the sauce

    Pour in the diced tomatoes and vegetable broth (or water). Stir to combine, scraping any browned bits from the bottom of the pan. Bring the mixture to a gentle simmer.

    Add potatoes and simmer

    Add the par-cooked (or raw) potato cubes to the simmering sauce. Stir gently to coat. Cover the pan and simmer for 12–20 minutes: if potatoes were par-cooked, simmer 10–12 minutes until sauce thickens and potatoes are tender; if raw, simmer 18–22 minutes until potatoes are fully cooked. Stir occasionally to prevent sticking.

    Season and finish

    Once potatoes are tender and the sauce has thickened to your liking, stir in the salt and sugar (if using). Simmer 1–2 minutes more. Remove from heat and stir in the chopped cilantro and lime juice. Taste and adjust seasoning (salt, chili, or lemon) as needed.

    Spoon the hot potato curry into bowls over basmati rice or alongside warm naan. Top with a dollop of plain or coconut yogurt if using, scatter the fresh cilantro leaves and sliced red onion over the curry, and serve immediately.
