    Prepare ingredients

    Slice the protein into thin, bite-sized pieces. Thinly slice the garlic and shallots, mince the bird's eye chilies if using, and slice the bell pepper and mushrooms. Trim and halve green beans. Pick the basil leaves from stems and set aside.

    Heat wok

    Place a large wok or heavy skillet over high heat until very hot (about 2–3 minutes). Add 3 tbs vegetable oil and swirl to coat.

    Aromatics

    Add the sliced garlic, shallots, and sliced red chilies to the hot oil. Stir-fry for 30–45 seconds until fragrant and starting to color, taking care not to burn the garlic.

    Cook protein

    Add the sliced protein to the wok in a single layer. Stir-fry on high heat until nearly cooked through (chicken/pork ~3–4 minutes, shrimp ~2–3 minutes, tofu 3–4 minutes to brown), stirring constantly.

    Add vegetables

    Add bell pepper, green beans, and mushrooms to the wok. Stir-fry for 1–2 minutes until vegetables are crisp-tender.

Sauce

    Mix sauce

    In a small bowl, whisk together 2 tbs oyster sauce, 1 tbs soy sauce, 1 tsp fish sauce, 1 tsp dark soy sauce (if using), 1 tsp chili paste, 1 tsp sugar, and 3 tbs water or stock until sugar dissolves.

    Combine

    Pour the sauce over the stir-fry and toss quickly to coat everything. Stir-fry for 1–2 minutes so the sauce reduces slightly and glazes the ingredients.

Finishing & Garnish

    Add basil

    Turn off the heat and immediately add the basil leaves, tossing to wilt them with the residual heat; the leaves should turn bright green and fragrant.

    Serve

    Divide cooked jasmine rice among 4 plates. Spoon Pad Ped over rice. Garnish with a squeeze of lime, cilantro leaves, and crushed peanuts if using. Serve immediately.
