Filling

    Prepare vegetables

    Thinly shred the cabbage, grate the carrot, finely chop the mushrooms, slice the green onion, and mince the garlic and ginger. Pat the shredded cabbage lightly with paper towel if very wet to remove excess moisture.

    Cook filling

    Heat 1 tsp neutral oil in a skillet over medium-high heat. Add minced garlic and ginger and sauté for 20–30 seconds until fragrant. Add ground pork (or substitute) and cook, breaking up, until no longer pink, about 3–4 minutes.

    Add vegetables and seasonings

    Add mushrooms, carrot, and cabbage to the pan. Cook for 2–3 minutes until vegetables soften but are not mushy. Stir in soy sauce, oyster sauce, sesame oil, sugar, cornstarch, salt, and pepper. Cook 1 more minute to let flavors combine. Taste and adjust seasoning. Remove from heat and stir in sliced green onion. Transfer filling to a bowl and let it cool to near room temperature (about 10 minutes).

Assembly

    Prepare sealing slurry

    Mix the cornstarch slurry: combine 2 tsp cornstarch with 1 tbsp water in a small bowl and stir until smooth.

    Lay out wrappers

    Place one spring roll wrapper on a clean work surface in a diamond orientation (one corner pointing toward you). Keep the remaining wrappers covered with a damp towel to prevent drying.

    Fill and roll

    Place about half of the cooled filling (roughly 2–3 tablespoons; adjust so you have even distribution for 2 rolls) near the corner closest to you, leaving about 1 inch (2.5 cm) clear at edges. Fold the near corner over the filling, tuck snugly, then fold the two side corners inward over the filling. Roll the wrapper away from you to nearly close, brush the exposed top edge with the cornstarch slurry, and finish rolling to seal. Repeat with the second wrapper and remaining filling.

    Press seams

    Place sealed rolls seam-side down on a plate and let rest 5 minutes so the slurry sets and seals fully.

Frying

    Heat oil

    Pour oil into a deep skillet or pot to a depth of about 2–3 inches (5–7 cm). Heat oil over medium heat until it reaches about 175°C (350°F). If you don't have a thermometer, test with a small piece of wrapper: it should sizzle and rise steadily without browning instantly.

    Fry rolls

    Carefully lower the rolls seam-side down into the hot oil (work in a single layer; fry both at once if your pan fits). Fry for 2.5–3.5 minutes, turning occasionally for even color, until golden brown and crisp. Adjust heat to maintain temperature: too hot will brown outside before heating through, too cool will make them oily.

    Drain

    Using a slotted spoon or tongs, remove rolls and drain on a wire rack or paper towels for 1–2 minutes to remove excess oil. Let rest 1–2 minutes before serving so internal steam redistributes.

Dipping Sauce (optional)

    Whisk rice vinegar, soy sauce, sugar, chili flakes (or sriracha), and water in a small bowl until sugar dissolves. Adjust sweetness or heat to taste. Serve alongside warm crispy rolls.
