Crab Cheese Filling

Prepare crab
If using whole cooked crab, remove shells and chop meat finely. If using imitation crab (surimi), roughly chop into small pieces so texture is even. Measure 1 cup and place in a medium mixing bowl.

Soften cream cheese
Ensure 4 oz cream cheese is at room temperature or microwave in 5–8 second bursts until just soft enough to mix (do not melt).

Mix filling
To the bowl with crab, add softened cream cheese, 1 cup shredded mozzarella, 2 tbsp mayonnaise, 2 tbsp sliced green onions, 1 tbsp chopped parsley, 1 tsp lemon juice, 1 tsp Dijon mustard, 1 tsp garlic powder, 1 tsp salt, and 1 tsp freshly ground black pepper. Use a spatula or spoon to fold ingredients together until evenly combined and smooth. Taste and adjust salt, lemon, or pepper as desired.

Add parmesan
Stir in 2 tbsp grated Parmesan until incorporated. The mixture should be spreadable but hold shape; if too stiff, add 1–2 tsp water or extra mayonnaise.

Prepare baking dish
Preheat the oven to 375°F (190°C). Lightly grease a small ovenproof baking dish or use individual ramekins for 5 portions. Spoon the crab-cheese mixture into five equal portions (about 1/5 of mixture per portion).

Bake
Bake in the preheated oven for 12–15 minutes, until the cheese on top is melted and bubbling and edges are lightly golden. For a browned top, switch to broil for 30–60 seconds while watching closely to avoid burning.
