Prepare cream cheese

Place the softened cream cheese in a medium mixing bowl. Whisk briefly until smooth and slightly whipped so it blends easily with the other ingredients.

Combine aromatics

Add the minced garlic, green onions, lemon zest and lemon juice to the cream cheese. Stir until evenly distributed.

Add crab and seasonings

Fold in the crab meat, saté sauce, soy sauce, toasted sesame oil, salt, pepper, and chili flakes (if using). Gently combine so the crab stays in flakes but the mixture is cohesive. Taste and adjust lemon, salt or saté for balance — it should be creamy, slightly tangy and have a savory-sweet-spicy saté note.

Chill: cover the bowl and refrigerate the filling for 15–20 minutes to firm up slightly; this makes wrapping easier.

Dumplings & Wrapping

Prepare wrappers

Lay out gyoza or wonton wrappers on a lightly dusted (cornstarch) surface, keeping a damp towel over unused wrappers to prevent drying.

Portion filling

Spoon about 1 tablespoon of the chilled crab filling into the center of each wrapper. Avoid overfilling to ensure a good seal.

Seal dumplings

Dip your fingertip in the small bowl of water and run a thin line around the edge of each wrapper. Fold the wrapper over (for round wrappers: bring edges together) and press to seal. Optionally pleat or twist the edges for a tighter, decorative seal. Lightly dust sealed dumplings with cornstarch to prevent sticking.

Pan-fry then steam (potsticker method)

Heat a large nonstick or cast-iron skillet over medium heat. Add 2 tablespoons neutral oil and swirl to coat. Place dumplings flat-side down in a single layer without crowding (work in batches if necessary). Cook undisturbed for 2–3 minutes until bottoms are golden-brown.

Steam to finish

Carefully pour 1/2 cup water into the skillet (it will sizzle). Immediately cover with a tight-fitting lid and reduce heat to medium-low. Steam for 4–5 minutes, or until wrappers are translucent and filling is heated through (internal temperature for crab should reach 145°F/63°C). Remove lid and continue cooking 30–60 seconds to re-crisp the bottoms.

Alternative: bake or deep-fry

To bake, brush dumplings with oil and bake at 425°F (220°C) for 10–12 minutes until golden. To deep-fry, heat oil to 350°F (175°C) and fry until golden, 2–3 minutes; drain on paper towels.

Serve

Arrange dumplings on a platter. Garnish with chopped cilantro or chives and lemon wedges. Serve hot with extra saté sauce for dipping and lemon on the side to squeeze over. Optionally provide soy or chili sauce for guests.
