Preparation Steps
Prepare the Filling
In a mixing bowl, combine the sliced corned beef, drained sauerkraut, and shredded Swiss cheese. Mix well to combine all ingredients evenly.
Assemble the Spring Rolls
Lay a spring roll wrapper on a flat surface, with one corner pointing towards you. Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Repeat with the remaining wrappers and filling.
Fry the Spring Rolls
In a large skillet or deep fryer, heat the vegetable oil over medium heat. Once hot, carefully add the spring rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove from oil and drain on paper towels.
Serve
Serve the hot Reuben spring rolls with Russian dressing for dipping.
