Method
Caramelized Onions
Prepare and caramelize onions
Heat a medium skillet over medium-low heat. Add butter and 1 tsp olive oil. When butter melts, add the thinly sliced onion and sprinkle with 1/2 tsp sugar and 1/4 tsp salt. Cook slowly, stirring every 3–5 minutes, adjusting heat so onions brown slowly without burning. After 20–30 minutes the onions should be soft, deeply golden and sweet. If pan dries out, add 1–2 tsp water. Remove from heat and set aside to cool slightly.
Dough & Assembly
Preheat oven and prepare dough
Position a rack in the lower third of the oven and preheat to 500°F (260°C) for at least 30 minutes; if using a pizza stone, place it in the oven while preheating. Lightly dust a pizza peel or work surface with 1–2 tbs flour. Stretch or roll the pizza dough into a 12-inch round, leaving a slightly thicker rim for the crust. Transfer the stretched dough to the peel or an inverted baking sheet lined with parchment.
Oil the crust
Brush the dough surface lightly with 1 tablespoon olive oil, leaving the outer 1/2-inch rim free of oil to help the crust crisp.

Assemble cheese layer
Evenly distribute the shredded fresh mozzarella over the oiled dough, leaving the rim exposed. Scatter the crumbled goat cheese over the mozzarella in small clumps so there are pockets of tangy flavor.
Add apples, onions and cranberries
Arrange the thin Granny Smith apple slices in a single layer over the cheeses, slightly overlapping if needed. Distribute the caramelized onions evenly on top of the apples, then sprinkle the dried cranberries across the pizza for bursts of sweetness.
Baking & Finishing
Bake the pizza
Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake 8–12 minutes (time will vary with oven and stone), rotating once halfway through, until the crust is golden and blistered and cheeses are melted and bubbling.
Finish and garnish
Remove the pizza from the oven. Immediately sprinkle with the fresh thyme leaves, a light pinch (about 1/4 tsp) of cracked black pepper, and a small pinch of sea salt if desired. If you like a touch of sweetness, drizzle 1 teaspoon of honey lightly across the top. Let rest 2–3 minutes, then slice and serve.
