Prepare vegetables & legumes
Wash and dice
Rinse cucumber, tomatoes, bell peppers, and parsley under cold water. If using a seeded cucumber, slice in half lengthwise and scoop seeds with a spoon. Dice the cucumber into approximately 1/4- to 1/2-inch pieces. Core and dice the red and yellow/orange bell peppers to the same size as the cucumber. Dice the tomatoes to match.
Drain chickpeas
Pour canned chickpeas into a colander, rinse under cold water until liquid runs clear, then shake off excess water. Optionally pat dry with paper towel. For a firmer texture, spread on a tray and let air-dry 10 minutes.
Combine salad ingredients
In a large mixing bowl, combine the diced cucumber, tomatoes, diced bell peppers, diced beets, chopped red onion, rinsed chickpeas, and chopped parsley. Toss gently to mix so colors and textures are evenly distributed.
Make dressing
In a small bowl or jar with a lid, add the olive oil, lemon juice, red wine vinegar, Dijon mustard, honey (or maple syrup), minced garlic, salt, and black pepper.
Whisk vigorously (or shake the jar with the lid on) until the dressing is emulsified and slightly thickened, about 20–30 seconds. Taste and adjust seasoning: add a pinch more salt or 1/2 teaspoon extra lemon juice if you prefer brighter acidity.
Dress and finish
Pour about two-thirds of the dressing over the salad and toss gently to coat all ingredients. Add more dressing as needed to achieve desired coating—some prefer lightly dressed, others more saucy. Reserve remaining dressing for serving or leftovers.
If using, sprinkle the crumbled feta or goat cheese over the top and give a final gentle toss. Taste and adjust with additional salt or pepper if necessary.
Let the salad sit 10 minutes at room temperature to allow flavors to meld, or chill up to 2 hours. Give the salad a quick toss before serving.
