    Prep chicken

    Trim excess fat from the chicken thighs and pat them dry with paper towels. Cut the thighs into roughly 1 to 1 1/4-inch pieces so they cook evenly.

    Make marinade

    In a medium bowl whisk together olive oil, soy sauce, lemon juice, honey, minced garlic, smoked paprika, ground cumin, dried oregano, salt, and black pepper until well combined.

    Marinate

    Add the cut chicken pieces to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes and up to 4 hours. If using wooden skewers, soak them in water for at least 30 minutes before assembling.

    Assemble skewers

    Thread the marinated chicken pieces onto the skewers, leaving a little space between pieces for even heat circulation. Alternate with red bell pepper and red onion pieces if using for color and flavor, making about 6–8 pieces of chicken per skewer depending on piece size.

    Preheat grill or broiler

    Preheat an outdoor grill to medium-high (about 400–450°F / 200–230°C). For indoor cooking, preheat the broiler and position the oven rack 6–8 inches from the heat source. Lightly oil the grill grates or a baking sheet.

    Cook skewers

    Grill the skewers for about 10–12 minutes, turning every 3–4 minutes so all sides get char marks and the chicken reaches an internal temperature of 165°F (74°C). If broiling, place skewers on a lined baking sheet and broil 4–5 minutes per side, watching closely to prevent burning.

    Rest

    Remove skewers from the grill or broiler and let them rest for 5 minutes to allow juices to redistribute.

    Finish & serve

    Sprinkle chopped fresh parsley over the skewers, serve with lemon wedges for squeezing, and optionally offer extra honey-lemon or yogurt sauce on the side.
