Prepare fruit
If you haven't already, peel, core and chop fresh pineapple into roughly 1-inch pieces. Peel the banana. If you want a thicker, colder smoothie, use a frozen banana (slice and freeze at least 2 hours beforehand).

Add ingredients to blender
Place the chopped pineapple (2 cups), banana (1 each), Greek yogurt (1 cup), and coconut milk (1 cup) into a high-speed blender.

Sweeten and brighten
Add honey or agave (1 tbs) and fresh lime juice (1 tsp) to the blender. If using vanilla extract, add 1 tsp now.

Blend until smooth
Secure the blender lid and blend on high for 45–90 seconds, or until the mixture is completely smooth and no large fruit pieces remain. Stop and scrape down the sides with a spatula once if necessary.

Add ice or adjust thickness
If you prefer a colder, thicker smoothie and didn't use a frozen banana, add 1 cup ice cubes to the blender and pulse/blend until smooth. If the smoothie is too thick, add up to 1/4 cup more coconut milk (30–60 ml) and blend briefly to reach the desired consistency.

Taste and balance
Taste the smoothie and adjust sweetness or acidity if needed: add up to 1 more teaspoon honey/agave for sweetness or a squeeze more lime for brightness. Blend briefly after any additions.

Serve
Pour the smoothie into two glasses (or one large). Sprinkle each serving with a pinch of chia or hemp seeds if using and garnish with a mint leaf. Serve immediately.
