Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent and fragrant, about 5 minutes.

Cook the Tomatoes

Add the chopped tomatoes to the pot. Stir in the smoked paprika, salt, and black pepper. Cook for about 10 minutes until the tomatoes are soft.

Add Broth and Simmer

Pour in the vegetable broth. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.

Blend the Soup

Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches and blend until smooth.

Finish with Cream

Stir in the heavy cream and let the soup heat through for another 5 minutes.

Ladle the soup into bowls, sprinkle with grated Parmesan cheese and chopped fresh basil before serving.
