Rinse and rest rice

Place 2 cups rice in a fine-mesh sieve and rinse under cold running water, swishing with your hand, until the water runs mostly clear (about 1–2 minutes). Drain and let sit 10 minutes to remove excess surface water.

Cook rice

Combine the rinsed rice and 2 1/4 cups water in a medium saucepan with a tight-fitting lid. Bring to a gentle boil over medium-high heat, then reduce heat to low, cover, and simmer 15 minutes. Remove from heat and let steam, covered, for 10 minutes more. Fluff lightly with a fork.

Season cooked rice

While the rice is still warm, stir in 1/2 tsp salt and 1 tbsp rice vinegar (if desired as slight brightening). Spread the rice on a rimmed baking sheet or shallow tray into an even 1/2-inch (about 1 cm) layer. Press gently with the back of a spatula to compact slightly. Refrigerate uncovered until firm and cool, at least 45 minutes (or freeze 15–20 minutes to speed up).

Cut rice into squares

When firm, use a sharp knife to cut the compacted rice into 2-inch squares (or desired shape). Wipe the knife between cuts for clean edges. Transfer pieces to a plate lined with parchment, keeping them slightly separated.

Pan-fry until crisp

Heat a large nonstick or well-seasoned cast-iron skillet over medium heat. Add 3 tbsp neutral oil and swirl to coat. Place rice squares in a single layer (work in batches if needed). Press each piece down with a spatula so the bottom contacts the pan. Fry undisturbed 4–6 minutes until the bottoms are deeply golden and crisp. Flip and fry the other side 3–5 minutes until both sides are crisp and rice is heated through. Adjust heat as needed to prevent burning; lower to medium-low if browning too quickly.

Make butter glaze

When the last batch is nearly done, reduce heat to low and add 2 tbsp unsalted butter to the skillet. As the butter melts, swirl in 1 tbsp soy sauce, 1/2 tsp sesame oil and 1 tsp rice vinegar. Stir briefly to emulsify into a glossy glaze.

Coat crispy rice

Return the fried rice squares to the pan briefly (or drizzle the glaze over pieces on a serving platter), spooning the butter-soy glaze over each piece so they get a light sheen. Toss in 1 tbsp toasted sesame seeds and gently shake to distribute.

Garnish and serve

Transfer the glazed crispy rice to a serving plate. Sprinkle with 2 tbsp thinly sliced scallions and optional 1 tsp furikake or nori flakes. Serve immediately while crisp. Crispy rice is best eaten within 10–20 minutes before it softens.
