Gyoza filling

    Prepare the Napa cabbage: finely shred and place in a bowl. Sprinkle with a pinch of salt, mix, and let sit 5–10 minutes to draw out moisture. Squeeze the cabbage firmly in a clean towel or paper towels to remove as much liquid as possible; measure about 1 cup packed and set aside.

    In a mixing bowl combine the minced A5 Wagyu, drained shredded cabbage, sliced green onions, minced ginger, and minced garlic. Mix gently to distribute aromatics without overworking the meat.

    Add soy sauce, sake, sesame oil, salt, white pepper, and cornstarch to the meat mixture. Fold until evenly combined. Cornstarch helps bind juices and keeps filling tender. Taste a small pinch by frying a tiny amount to check seasoning and adjust (use caution — already cooked for tasting).

Wrappers & sealing

    Set up an assembly station: bowl of filling, stack of gyoza wrappers dusted lightly with flour to prevent sticking, and a small bowl of water for sealing.

    Working with one wrapper at a time, place about 1 teaspoon to 1 tablespoon (depending on wrapper size) of filling in the center. Dip your finger into the water and wet the edge of half the wrapper circumference.

    Fold the wrapper in half over the filling and pleat one side to create classic gyoza pleats, pressing firmly to seal and remove air pockets. Place finished gyoza on a lightly dusted tray, seam side up. Repeat until all wrappers are filled. Keep covered with a damp towel if not cooking immediately.

Cooking

    Heat a nonstick or well-seasoned cast-iron skillet over medium-high heat. Add 1 tablespoon of neutral oil and swirl to coat the bottom.

    Arrange 8–12 gyoza in the skillet seam side up (depending on pan size), leaving small gaps between dumplings so bottoms don't stick together.

    Fry for 1–1.5 minutes until the bottoms are golden brown. Immediately pour in about 3 tablespoons (per batch) of the steaming water (from the Cooking ingredients) — enough to come up roughly 1/4 to 1/3 of the dumpling height — then cover the pan with a tight-fitting lid to steam.

    Steam for 3–4 minutes until the wrappers become translucent and filling is cooked through. Remove the lid and continue cooking another 30–60 seconds to evaporate remaining water and crisp the bottoms again.

    Transfer gyoza to a serving plate, bottom side up to show the crisp lace. Repeat with remaining batches, adding the remaining oil if pan becomes dry.

Dipping sauce (finish)

    In a small bowl combine soy sauce and rice vinegar, then stir in chili oil, toasted sesame seeds, and sliced green onion if using. Adjust ratio to taste; more vinegar for tang, more soy for salt.

    Serve the hot gyoza immediately with the dipping sauce on the side. Enjoy the contrast of rich Wagyu filling, tender steamed wrapper, and crisp browned bottom.
