Method
Prepare Fruit
- 1
Wash and dry
Rinse all berries, grapes, and kiwi under cold water. Pat dry gently with paper towel or a clean kitchen towel to remove excess moisture (this helps prevent sogginess and preserves appearance).
- 2
Cut larger fruits
Hull strawberries and halve or quarter them depending on size. Peel and core the pineapple, then cut into 1-inch cubes. Remove rind and seeds from watermelon and cube into 1-inch pieces. Peel and cube the mango into 1-inch pieces. Peel and slice the kiwi into rounds or half-moons. Segment the orange by cutting away the peel and membrane and extracting the orange segments, or slice into thin rounds if preferred.
- 3
Trim grapes and berries
Remove grapes from stems and discard any bruised pieces. Remove any stems or hull remnants from berries. Keep blueberries and blackberries whole.
Make Glaze (optional)
- 4
If using the honey glaze, place 2 tbs honey and 1 tsp water in a small microwave-safe bowl. Microwave for 10–15 seconds or warm gently on the stove until runny. Stir in 1 tsp fresh lemon juice and the zest of half the lime if you want extra brightness. Taste and adjust—add a little more water if glaze is too thick. Set aside to cool slightly.
Assemble Platter
- 5
Select a large serving platter or wooden board and dry it thoroughly. Place larger fruit pieces (watermelon cubes, pineapple, mango) first in groups or small mounds to form a base and visual anchors across the platter.
- 6
Fill in gaps with medium-sized fruits (strawberries, kiwi slices, orange segments) arranging them in clusters or alternating colors for contrast. Keep colors and shapes balanced across the platter so no one area looks crowded.
- 7
Nestle clusters of grapes and scatter blueberries and blackberries in the remaining spaces to create texture and fill small gaps.
- 8
If serving bite-sized skewers, thread a selection of grapes, a blueberry, a cube of pineapple and a small piece of strawberry onto toothpicks and arrange them on one section of the platter.
Finish & Garnish
- 9
- 10
Zest the lime over the platter for a bright aromatic finish and squeeze the remaining lime juice lightly over the fruit (about 1–2 tsp) to keep apples or pears fresh if included, and to add brightness.
- 11
Scatter fresh mint leaves evenly over the platter and sprinkle toasted shredded coconut over one area if using. Place a small bowl with any remaining glaze or an optional yogurt-honey dip on the side.
