Boil water
Place 4 cups of water in a medium pot and bring to a rolling boil over high heat. Add 1 tablespoon coarse sea salt to the boiling water.

Cook edamame
Add 1 cup frozen edamame (in pods) to the boiling water. Return to a boil, then reduce heat slightly to maintain a gentle boil. Cook for 3 to 5 minutes until pods are bright green and tender but still slightly firm. Taste one pod to confirm doneness.

Season simple salty
If serving salty-style, toss the hot drained edamame with 1 teaspoon coarse sea salt (or to taste) and 1 teaspoon toasted sesame oil if using. Toss for 20–30 seconds so pods are evenly coated. Transfer to a serving bowl.

Garnish (optional): Sprinkle 1/2 teaspoon toasted sesame seeds and 1 tablespoon thinly sliced scallions over the edamame. Serve with lime wedges on the side.
Spicy Finish

Make spicy sauce
In a small bowl, whisk together 1 teaspoon chili garlic sauce (or Sriracha), 1 teaspoon soy sauce, 1 teaspoon rice vinegar, 1 teaspoon toasted sesame oil, 1/4 teaspoon crushed red pepper flakes (optional), and 1/8 teaspoon freshly ground black pepper until combined.

Toss with edamame
Pour the spicy sauce over the hot drained edamame and toss vigorously for 20–30 seconds to coat the pods evenly. Taste and adjust heat or salt (add more soy or a pinch of coarse salt if needed).

Garnish (optional): Finish with a sprinkle of toasted sesame seeds and sliced scallions. Serve immediately with lime wedges.
Serving & Eating

Serve hot: Place seasoned edamame in a bowl. To eat, squeeze the pod between your fingers or teeth to pop the soybeans into your mouth and discard the pod.

Storage: Leftover seasoned edamame can be stored in an airtight container in the refrigerator for up to 2 days. Reheat briefly in a skillet over medium heat or microwave until warm; toss again with a tiny splash of sesame oil or soy as needed.
