    Prepare broccolini

    Rinse broccolini under cold water and pat dry thoroughly with kitchen towels. Trim the tough ends (about 1/2 to 1 inch) and remove any yellowing leaves so the stalks cook evenly.

    Preheat grill

    Preheat a gas or charcoal grill to medium-high (about 400–450°F / 200–230°C). If using a grill pan, heat it over medium-high heat until very hot and lightly smoking.

    Season

    In a large bowl, toss the broccolini with the 2 tablespoons olive oil, 1 teaspoon sea salt, and 1/2 teaspoon freshly ground black pepper until evenly coated.

    Chargrill

    Arrange broccolini perpendicular to grill grates so they don't fall through (or use a grill basket). Place on the hot grill and cook, turning occasionally, until bright green with charred blistered spots and tender-crisp, about 6–9 minutes total depending on thickness. For more even charring, rotate every 2–3 minutes. If using a grill pan, press gently with tongs to maximize contact.

    Make finishing oil

    While broccolini grills, combine the minced garlic, lemon zest and lemon juice from 1 lemon, and the 1/4 teaspoon red pepper flakes in a small bowl. Stir to combine. Add a pinch of salt if desired.

    Toss and serve

    As soon as broccolini is off the grill, transfer it to a serving platter and immediately drizzle the lemon-garlic mixture evenly over the hot broccolini so the flavors bloom. If desired, sprinkle toasted pine nuts or slivered almonds and 2 tablespoons grated Parmesan over the top. Adjust seasoning with additional salt and pepper to taste.

    Optional warm oil finish

    For a warmer finish, gently warm 1 tablespoon olive oil in a small skillet, add the minced garlic and cook 20–30 seconds until fragrant (do not brown), remove from heat and stir in the lemon juice and zest, then drizzle over broccolini.
