    Prepare crab

    Gently inspect the lump crab meat for any cartilage or shell fragments and remove them. Place crab meat in a medium bowl and break up large lumps gently so you have bite-sized pieces but not a puree.

    Add the finely chopped shallot, chopped chives, lemon juice, lemon zest, sea salt and black pepper to the bowl with the crab. Fold gently with a rubber spatula until ingredients are evenly distributed. Taste and adjust seasoning (add up to 1/4 tsp more salt or a few drops more lemon if needed). Cover and refrigerate while you make the aioli and quick-pickled cucumbers so flavors meld, about 15–20 minutes.

Miso-Butter Aioli

    Soften and combine butter and miso

    Place the softened butter in a small bowl. Stir in the white miso paste until the miso is fully incorporated and the butter becomes a smooth, uniform mixture.

    Make the aioli base

    In a separate bowl combine the mayonnaise, miso-butter mixture, rice vinegar, grated garlic, honey (or mirin), sesame oil and black pepper. Whisk vigorously until glossy and homogenous. If the aioli is too thick for your desired consistency, whisk in cold water, 1 teaspoon at a time, up to 1 tablespoon, until you reach a creamy, pipeable consistency.

    Taste the aioli and adjust: add a touch more vinegar for brightness, more honey/mirin for sweetness, or a pinch of salt if needed. Transfer to a squeeze bottle or small bowl and refrigerate briefly to chill, about 10 minutes.

Cucumber & Assembly

    Prepare cucumbers

    Trim both ends of the English cucumber. Using a mandoline or a sharp knife, slice the cucumber into 1/8- to 1/4-inch rounds (thin but substantial enough to hold topping). You should get about 30–40 slices from one cucumber depending on thickness.

    Quick-pickle cucumber slices

    In a shallow dish combine the rice wine vinegar, sugar and coarse sea salt. Stir until sugar dissolves. Add the cucumber slices and toss to coat. Let sit for 5–10 minutes, tossing once halfway through. Drain off excess liquid and pat the slices lightly with paper towel to remove excess moisture so they don’t make the assembly soggy.

    Finish crab filling (optional bind)

    If you prefer the crab mixture a little creamier and easier to pipe, fold 1 tablespoon of the prepared miso-butter aioli into the crab gently. Do not overmix; you want the crab to remain chunky. If you want a firmer quenelle for stacking, refrigerate the crab briefly (5–10 minutes) to chill and set.

    Assemble bites

    Arrange cucumber slices on a serving platter. Using a small spoon or a piping bag fitted with a round tip, place about 1 tablespoon of the crab mixture onto each cucumber slice. If using a piping bag, pipe a neat mound in the center of each slice.

    Top with aioli and garnish

    Dot or pipe about 1/2 teaspoon of the miso-butter aioli on top of each crab mound (or create a small swirl beside it). Sprinkle each bite with a few toasted sesame seeds and a small pinch of microgreens or cilantro. If desired, brush the outer rim of the cucumber lightly with 1/4 teaspoon neutral oil or melted clarified butter before placing crab to add sheen and prevent slipping.

    Serve

    Serve immediately so cucumber remains crisp. These make approximately 28–32 canapé-sized bites. Leftover aioli can be refrigerated up to 3 days in an airtight container; crab should be consumed the same day.
