Method

Rice Preparation

    Rinse and cook rice

    Rinse 2 cups Japanese short-grain rice under cold water until the water runs almost clear to remove excess starch. Drain for 15 minutes. Combine the rinsed rice with 360 ml water in a rice cooker or a heavy-bottomed pot. If using a pot, bring to a boil, then lower the heat to very low, cover, and simmer 12–14 minutes. Remove from heat and let rest, covered, for 10 minutes.

    Make sushi vinegar

    While rice cooks, combine 4 tbs rice vinegar, 2 tbs granulated sugar, and 1 tsp fine sea salt in a small saucepan over low heat. Stir until sugar and salt dissolve; do not boil. Remove from heat and let cool to room temperature.

    Season rice

    Transfer hot cooked rice to a large shallow wooden or non-reactive bowl. Gently fold the sushi vinegar into the rice with a rice paddle or spatula using cutting-and-fanning motions to coat each grain while fanning the rice to cool and give it shine. Aim for slightly warm rice. Cover with a damp towel until ready to use.

Tuna Preparation and Plating

    Chill and slice fish

    Keep all tuna chilled until ready to slice. Using a very sharp, long sushi/knife (sujihiki or yanagiba), trim any excess connective tissue. For O-toro, cut 6–8 slices approximately 8–10 g each, about 4–5 cm long and 0.5 cm thick to showcase marbling. For Chu-toro, cut 5–6 slices slightly leaner but similar size. For Akami, cut 6–8 thinner slices (3–4 mm) to emphasize the clean texture. Wipe the blade between cuts with a damp cloth to keep slices pristine.

    Optional oil and garnish

    Lightly brush the O-toro slices with 0.5 tsp extra virgin olive oil (or a few drops) to heighten richness, then sprinkle a tiny pinch of toasted sesame seeds and 1/8 tsp yuzu or lemon zest over O-toro. For Chu-toro and Akami, brush a hair of neutral oil (grapeseed) on one edge if you want added sheen. Keep garnishes minimal to let tuna flavors shine.

    Plate sashimi

    Arrange the O-toro, Chu-toro, and Akami on a chilled platter in three groups. Place microgreens or mitsuba between groups for color. Add small mounds of wasabi and pickled ginger to the side and a small dish of soy sauce for dipping. If desired, place a thin slice of shiso beneath a few slices for contrast.

Futomaki Roll Assembly

    Prepare nori

    Toast one nori sheet quickly over flame or in a dry pan for a few seconds to crisp (optional). Place nori shiny side down on a bamboo mat (makisu) lined with plastic if desired.

    Spread rice and fill

    Wet your hands lightly with seasoned water (1 tbs rice vinegar + 2 tbs water) to prevent sticking. Spread approximately 1 cup of prepared sushi rice evenly over the nori, leaving a 2 cm strip at the far edge uncoated. Arrange cucumber julienne, tamago batons, kanpyo or pickled daikon strips, and shiso leaves in a line across the center of the rice.

    Roll and shape

    Lift the bamboo mat edge nearest you and roll the nori over the fillings, applying gentle, even pressure to form a tight cylinder. Release and roll a couple of times more to shape. Press gently to seal the edge with the uncovered nori strip. Let the roll rest seam-side down for 2 minutes to set.

    Slice futomaki

    Using a very sharp knife moistened with seasoned water, slice the roll into 6–8 equal pieces. Wipe the blade between cuts to maintain clean cross-sections. Place the futomaki on the serving platter alongside the tuna selection.

Final Assembly & Service

    Assemble the BLUEFIN TUNA SET

    On a chilled long platter or individual plates, arrange the three tuna sections (O-toro, Chu-toro, Akami) with small portions of futomaki. Add small mounds of wasabi and pickled ginger. Garnish with a few microgreens and a light sprinkle of toasted sesame seeds around the futomaki. Provide soy sauce in a dipping dish at the side.

    Serving suggestions

    Recommend tasting progression: start with Akami to appreciate the clean, lean flavor; move to Chu-toro for balance of fat and texture; finish with O-toro to savor full-fat richness. Use a small dab of wasabi on the fish or mix into soy sauce per diner preference. Serve immediately; sashimi is best within 30 minutes of slicing.

    Storage note

    If not serving immediately, keep sliced tuna covered and chilled (but not frozen) for up to 2 hours. Leftover sushi rice can be refrigerated up to 24 hours but is best used same day.
