Muddle aromatics (optional but recommended)
If using fresh peach slices and a rosemary sprig: place the peach slices and one small rosemary sprig in a mixing glass or shaker. Gently muddle 1–2 times to release peach juice and rosemary oils — be gentle to avoid pulverizing the peach. This step enhances the fresh garden aroma to complement the Grey Goose Essences.

Build the cocktail
Add 2 oz Grey Goose Essences White Peach & Rosemary, 0.5 oz Martini Bianco, and 0.5 oz St-Germain to the mixing glass (with the muddled ingredients, if used). Add a handful of ice (about 6–8 large cubes). Stir gently for 10–12 seconds to chill and lightly dilute, combining flavors without over-aerating.

Strain and top
Strain the mixture into the chilled highball glass over fresh large ice (one large cube or sphere preferred). Top with about 3 oz chilled tonic water. Pour the tonic slowly over the back of a spoon or down the side of the glass to preserve effervescence and keep the layered aromatics.

Garnish and finish
Gently slap a fresh rosemary sprig between your palms to release its oils and place it in the glass as garnish. Float 1–2 thin peach slices on top or thread a slice on the rim. Express a lemon twist over the glass for a hint of citrus oil if desired, then discard or drop it in. Give the drink one gentle stir (1–2 rotations) to integrate the tonic without flattening bubbles.

Serve
Serve immediately while tonic is effervescent. Provide a straw or long stirrer so the guest can adjust dilution or mix as they sip.
