Method

Preparation

  1. 1

    Salt the rim (optional)

Run a grapefruit wedge or lime around the rim of a highball or Collins glass. Dip the rim into a shallow plate of coarse salt to lightly coat. Set the glass aside.

  2. 2

    Build and shake

In a cocktail shaker, add the blanco tequila (2 oz), fresh grapefruit juice (3 oz), agave syrup (0.5 oz) and fresh lime juice (0.5 oz). Fill the shaker with ice, secure the lid, and shake vigorously for about 10–12 seconds until well chilled.

  3. 3

    Strain over ice

Fill the prepared glass with fresh cubed ice (about 1 cup). Strain the shaken mixture over the ice into the glass, leaving room for soda.

  4. 4

    Top with soda & finish

Top the drink with about 2 oz of club soda. Gently stir once or twice with a bar spoon to integrate the soda without flattening it.

  5. 5

    Garnish and serve

Garnish with a grapefruit wedge or wheel on the rim. Serve with a straw if desired and recommend tasting before adding any additional sweetener.
