Crab Cakes

    Prepare crab mixture

    Place the lump crab meat in a large bowl and gently break up any large lumps with your hands, taking care to keep some chunks for texture. In a separate bowl whisk together 1/2 cup mayonnaise, 1 large egg, 1 tablespoon Dijon, 1/2 teaspoon Worcestershire, 1 tablespoon fresh lemon juice, 2 tablespoons finely chopped parsley, 2 tablespoons finely chopped celery, 2 tablespoons chopped green onion, 3/4 teaspoon Old Bay, 1/2 teaspoon salt and 1/4 teaspoon black pepper until smooth.

    Add the mayonnaise-egg mixture to the crab meat and fold gently to combine. Sprinkle in 3/4 cup soft breadcrumbs and fold until the mixture just holds together when pressed. Do not overmix — you want a loose, chunky texture.

    Form cakes and chill

    Divide the mixture into 6 equal portions (about 3 ounces / 85 g each). With lightly moistened hands, shape each portion into a compact patty about 3 inches across and 3/4 inch thick. Place formed cakes on a sheet pan, cover loosely with plastic wrap, and refrigerate for at least 30 minutes to firm. Chilling helps them hold together during sautéing.

    Preheat pan

    About 10 minutes before cooking, heat a large nonstick or stainless steel skillet over medium heat. Add 2 tablespoons unsalted butter and 1 tablespoon neutral oil. Heat until the butter foam subsides and the fat shimmers but is not smoking — this prevents the butter solids from burning while giving flavor.

    Sauté the crab cakes

    Working in a single layer (cook in two batches if necessary), place the chilled crab cakes in the skillet, leaving space between them. Cook undisturbed for 3–4 minutes until the bottoms are deep golden-brown. Carefully flip with a thin spatula and cook 2.5–3 minutes more until the second side is golden and the cakes are cooked through. If the exterior browns too quickly, reduce the heat to medium-low and cover briefly (30–45 seconds) to finish cooking. Transfer cooked crab cakes to a warm oven set to 200°F (95°C) or a plate lined with paper towels while you cook remaining cakes.

Lemon Aioli

    While crab cakes chill or cook, make the lemon aioli. In a small bowl combine 1/2 cup mayonnaise, 1 tablespoon fresh lemon juice, 1 teaspoon lemon zest, 1 minced garlic clove, 1/2 teaspoon Dijon mustard and 1 teaspoon extra-virgin olive oil. Whisk until smooth. Season with 1/4 teaspoon salt and 1/8 teaspoon freshly ground black pepper. Taste and adjust acidity or seasoning — add up to 1/2 teaspoon sugar or more lemon juice if you prefer brighter flavor. Refrigerate until ready to serve.

    Arrange 2–3 crab cakes per plate (depending on portion size). Spoon 1–2 tablespoons of lemon aioli alongside or make a small quenelle and place on top of each cake. Garnish with microgreens or chopped parsley and serve with lemon wedges for squeezing over.

    Serve immediately while crab cakes are hot and the aioli is chilled. Leftover crab cakes can be refrigerated for up to 2 days; reheat gently in a skillet with a bit of butter to re-crisp the exterior.
