Prep & Chill

    Chill glass

    Place a coupe or Nick & Nora glass in the freezer for at least 5 minutes or fill it with ice water while you assemble the cocktail to ensure the drink stays cool.

    If using fresh yuzu, strain seeds and pulp. Have all ingredients measured and ready (mise en place).

Mixing

    Combine ingredients

    In a cocktail shaker, add 0.5 oz chilled vodka, 3 oz Ozeki Junmai sake, 0.5 oz fresh yuzu (or lemon) juice, 0.25 oz simple syrup, 0.25 oz Cointreau (if using), and 1 dash bitters.

    Add ice and shake

    Fill the shaker with ice (about 1 cup). Cap and shake vigorously for 10–12 seconds. Because sake is lower in alcohol and lighter-bodied than many spirits, a shorter, brisk shake chills and slightly dilutes the mix without bruising delicate sake aromatics.

    Fine-strain

    Discard the ice from the chilled glass (if used). Double-strain the cocktail into the pre-chilled coupe or Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any citrus pulp for a clean, silky presentation.

Finish & Serve

    Express the oils from a yuzu or lemon twist over the surface of the drink by holding the twist skin-side down over the glass and giving it a sharp squeeze, then run it around the rim and drop into the cocktail (or rest on the lip).
