Prepare filling

In a mixing bowl combine ground pork, crumbled tofu (if using), drained napa cabbage, grated carrot, minced shiitake, chopped green onions, cilantro, garlic, and ginger. Mix gently but thoroughly to combine.

Add soy sauce, sesame oil, fish sauce, salt, white pepper and cornstarch to the mixture. Mix until evenly incorporated and the filling becomes slightly sticky; this helps the filling hold together when steamed or pan-fried. Chill the filling in the refrigerator for 15–20 minutes to firm up (optional but recommended).
Assemble dumplings

Set up an assembly station: dumpling wrappers on a tray, a small bowl of water for sealing, and a spoon for portioning the filling.

Place one wrapper flat in your palm or on a lightly floured surface. Put about 1 teaspoon to 1 tablespoon of filling in the center depending on wrapper size (avoid overfilling).

Dip your finger in the water and moisten the edge of the wrapper. Fold the wrapper in half over the filling and press to seal in the center. Create small pleats along one side as you press the edges together to form a crescent-shaped dumpling, or simply seal with a smooth edge. Ensure there are no gaps or air pockets.

Place assembled dumplings on a tray lined with parchment or lightly dusted flour. Repeat until all filling is used. You should have roughly 25–30 dumplings depending on portion size.
Cook dumplings

Pan-fry then steam (potsticker method)
Heat a large nonstick skillet over medium-high heat and add 2 tablespoons neutral oil. Arrange dumplings in a single layer, flat side down, without crowding (work in batches if necessary). Fry 2–3 minutes until the bottoms are golden brown.

Carefully add 1/4 cup water to the skillet and immediately cover with a tight-fitting lid to trap steam. Reduce heat to medium and steam for 5–6 minutes, or until the filling reaches 74°C (165°F) and wrappers become translucent.

Remove lid and cook another 30–60 seconds to re-crisp the bottoms. Transfer dumplings to a plate. Alternatively, you can steam all dumplings for 7–8 minutes in a bamboo or metal steamer if you prefer softer dumplings.
Make red curry sauce

In a medium saucepan, heat 1 tablespoon vegetable oil over medium heat. Add red curry paste and sauté for 30–45 seconds until fragrant to bloom the spices.

Stir in coconut milk and stock, bringing the mixture to a gentle simmer. Whisk to combine the curry paste with the coconut milk until smooth.

Add fish sauce, brown sugar, and sliced red bell pepper. Simmer gently for 4–6 minutes so the flavors meld and the pepper softens slightly. Taste and adjust seasoning with salt, additional fish sauce, or lime juice.

Finish the sauce by stirring in lime juice and chopped basil, removing from heat. Keep warm until ready to serve.
Plate and serve

Spoon a shallow pool of warm red curry sauce onto individual appetizer plates or a serving platter.
