Burger Patties
Prepare flax egg
In a small bowl, whisk ground flaxseed and warm water together. Set aside for 5–10 minutes until thickened (this acts as a binder).
Prep vegetables
Finely grate the carrot and finely chop the red bell pepper and onion. Mince the garlic. Make sure cooked brown rice is cooled or at room temperature.
Combine base ingredients
In a medium bowl, mash the rinsed black beans with a fork or potato masher until mostly mashed but still a little chunky (about 10–15 stirs). Add the cooked brown rice, rolled oats, grated carrot, chopped bell pepper, chopped onion, minced garlic, ground cumin, smoked paprika, soy sauce, salt, and pepper.
Form patties
Divide the mixture into 4 equal portions (for 4 burgers). With lightly oiled hands, shape each portion into a compact patty about 3/4-inch thick and roughly the diameter of your buns. Place patties on a parchment-lined tray and refrigerate for 15–20 minutes to firm up (optional but recommended).
Cook patties
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon olive oil and swirl to coat. Place patties in the pan without crowding. Cook for 4–5 minutes per side, pressing gently once halfway through to ensure even contact; reduce heat if the exterior browns too quickly. Add remaining 1 tablespoon oil before cooking the second batch if needed. Internal texture should be firm and lightly crisp on both sides.
Toppings & Assembly
Toast buns
Split the burger buns and toast cut sides in a dry skillet or toaster for 1–2 minutes until lightly golden.
Prepare condiments
In a small bowl, mix the mayonnaise, ketchup, and mustard until smooth. Taste and adjust seasoning if desired.
Assemble burgers
Spread about 1 tablespoon of the prepared sauce on the bottom half of each bun. Place a lettuce leaf, then a cooked veggie patty, top with a tomato slice, a few rings of red onion, and avocado slices. Spread a little sauce on the top bun and close the burger.
Serve
Serve immediately while patties are warm. Optional sides: oven fries, salad, or pickles.
