Method
Prep Tofu & Hearts of Palm
Press and crumble tofu
Wrap the tofu in a clean kitchen towel or paper towels and place something weighted on top (a heavy skillet or a few cans) for 15–20 minutes to remove excess water. After pressing, crumble the tofu into small pea- to cornmeal-sized pieces with your fingers or a fork so it approximates the texture of classic tartare.
Drain and chop hearts of palm
Drain the hearts of palm, pat dry, and finely chop so pieces are similar in size to the crumbled tofu (about 1/4-inch pieces).
Mix Flavor Components
Prep aromatics and pickles
Finely mince the red onion and the dill pickle(s). Rinse the capers briefly under cold water and roughly chop half of them; reserve the rest for garnish. Finely chop the fresh parsley and dill.
Combine base ingredients
In a large bowl, combine the crumbled tofu and chopped hearts of palm. Add the minced red onion, chopped pickles, chopped capers, parsley, and dill. Stir gently to distribute evenly.
Make Dressing & Finish
Prepare dressing
In a small bowl, whisk together the vegan mayonnaise, lemon juice, Dijon mustard, olive oil, sea salt, and black pepper until smooth and slightly emulsified. Taste and adjust seasoning — add more lemon for brightness, a pinch more salt if needed, or a bit more Dijon for tang.
Combine and chill
Pour the dressing over the tofu-hearts of palm mixture and fold gently until coated. The mixture should be creamy but still have distinct pieces of tofu and hearts of palm. Cover and refrigerate for at least 30 minutes (up to 4 hours) to let flavors meld.
Serve
Before serving, taste and adjust seasoning. Spoon the plant-based tartar into a serving bowl or use a ring mold to portion onto plates. Garnish with reserved capers and a few extra chopped herbs. Serve with toasted baguette slices or crackers, a small salad of microgreens or baby arugula, and lemon wedges for squeezing.
