Caramelized Onions

Prepare the onion: peel and thinly slice the onion into half-moons.

Heat a skillet over medium-low heat and add 1 tablespoon oil. Add the sliced onion, 1/4 tsp salt, and 1/2 tsp brown sugar (optional).

Cook slowly, stirring every 3–5 minutes, until onions are deep golden brown and soft, about 20–25 minutes. Reduce heat if they start to burn. Remove from pan and keep warm.

French Fries

Preheat oven to 425°F (220°C) if baking, or prepare a deep skillet for frying. Wash and peel (optional) the potatoes.

Cut potatoes into 1/4–1/2-inch fries. For crisper fries, soak in cold water 20–30 minutes, then drain and pat completely dry.

If baking: toss dried fries with 2 tbsp oil, 1 tsp salt, 1/4 tsp pepper and 1/2 tsp paprika (optional). Spread in a single layer on a baking sheet and bake 20–30 minutes, flipping halfway, until golden and crisp.

If frying: heat 1–2 inches of oil in a heavy skillet to 325°F (160°C). Fry potatoes in batches 3–4 minutes until pale and softened. Remove, drain, increase oil to 375°F (190°C) and fry again until golden and crisp, about 2–3 minutes. Drain on paper towels and season with salt and pepper.

Bring Impossible patties to room temperature for 10–15 minutes if frozen or just removed from fridge.

Preheat a grill or heavy skillet (cast iron) over medium-high heat. Lightly oil the grates or pan with 1 tablespoon neutral oil.

Season both sides of each patty lightly with salt and pepper (use portions from the Burgers ingredient line).

Grill or pan-sear patties 3–4 minutes per side, flipping once, until a dark sear forms and internal temperature reaches about 165°F (74°C) or according to package instructions for best texture.

During the last 30–45 seconds of cooking, place a vegan cheddar slice on each patty and cover the pan or close the grill lid to melt cheese.

Toast the buns cut-side down on the grill or pan 30–60 seconds until lightly browned.

Assemble each burger: spread optional condiments on buns, place lettuce leaves on bottom bun, add the cheese-topped patty, top with 1.5 tablespoons caramelized onions, then 2 tomato slices, and crown with top bun.

Serve immediately with a portion of fries.
