Pour 6 cups fresh apple cider and 1 cup water into a large saucepan or medium stockpot. The water slightly dilutes very sweet cider to balance flavor.

Stir in 2 tablespoons light brown sugar and 1 tablespoon maple syrup until dissolved. Adjust sweetness later to taste.

Spices & Aromatics

Add 3 whole cinnamon sticks, 1 teaspoon whole allspice berries, 6 whole cloves, 1 star anise, and 1 tablespoon thinly sliced fresh ginger to the pot.

Using a vegetable peeler or a microplane, zest the orange over the pot, then add the halved orange (cut side down) to the cider. The zest adds bright citrus aroma while the orange releases additional flavor as it simmers.

Simmer gently

Bring the mixture to a gentle simmer over medium heat. Once it reaches a simmer, reduce heat to low and let it gently simmer, partially covered, for 20–25 minutes to allow the spices to infuse the cider. Avoid boiling — boiling will evaporate volatile aromatics and can make the cider taste harsh.

Finishing & Serving

After 20–25 minutes, remove the pot from heat. Use a fine-mesh strainer or slotted spoon to remove and discard the whole spices, orange halves, and larger ginger pieces. Press gently on solids with the back of a spoon to extract remaining liquid and flavor.

Stir in 1 teaspoon fresh lemon juice to brighten the finished cider. Taste and adjust sweetness with additional brown sugar or maple syrup if desired.

Optional warming with rum

If serving adult portions, warm glasses or mugs and add 1 ounce (per serving) dark rum to each warmed mug. Pour hot cider over the rum. For non-alcoholic servings, simply pour cider into mugs.

Garnish each mug with a thin apple slice and a cinnamon stick. Serve immediately while hot.

Storage

Leftover cider can be cooled to room temperature, refrigerated in a covered container for up to 5 days, and reheated gently on the stovetop. Stir before serving.
