Grilled Chicken
Prepare the chicken
Pound each chicken breast to an even thickness (about 3/4 inch) or slice horizontally to make two cutlets. Pat dry with paper towels.
Make the marinade
In a bowl combine 2 tbs olive oil, 1 tbs lemon juice, minced garlic clove, 1 tsp smoked paprika, 1 tsp dried oregano, 1/2 tsp kosher salt, 1/4 tsp black pepper and red pepper flakes if using. Whisk until combined.
Marinate
Place chicken in a resealable bag or shallow dish and pour the marinade over. Massage to coat thoroughly. Refrigerate for at least 20 minutes and up to 2 hours (avoid longer to prevent texture breakdown).
Preheat grill
Preheat an outdoor grill or grill pan to medium-high (about 400-450°F / 200-230°C). Oil the grates lightly to prevent sticking.
Grill
Remove chicken from marinade and let excess drip off. Grill cutlets or breasts 4-6 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and juices run clear. Do not press down on the chicken while grilling.
Rest and slice
Transfer chicken to a cutting board and let rest 5 minutes. Slice against the grain into strips and serve as an add-on.
Grilled Shrimp
Prepare shrimp
If using skewers, thread 2 shrimp per skewer or leave loose. Pat shrimp dry with paper towels.
Make the marinade
In a bowl combine 1 tbs olive oil, 1 tsp lemon zest, 1/2 tbs lemon juice, minced garlic clove, 1/2 tsp smoked paprika, 1/2 tsp kosher salt and 1/4 tsp black pepper. Whisk to combine.
Marinate briefly
Toss shrimp with the marinade and let sit at room temperature for 10-15 minutes (do not marinate long, shrimp will become mushy).
Preheat grill
Preheat grill or grill pan to medium-high (about 375-425°F / 190-220°C). Oil grates lightly.
Grill shrimp
Grill shrimp 2-3 minutes per side until opaque and slightly charred, with internal temperature about 120-125°F. Remove promptly to avoid overcooking.
