Measure and combine
In a cocktail shaker add 2 oz El Tequileño Blanco, 1.5 oz passionfruit juice, 0.75 oz falernum, 0.5 oz vanilla syrup and 0.5 oz fresh lime juice.
Add ice and shake
Fill the shaker with ice (about 1 cup) and shake vigorously for 12–18 seconds until the outside of the shaker is frosty and the liquid is well chilled and slightly diluted.
Fine strain
Double-strain (using a Hawthorne and fine mesh strainer) into the chilled coupe or martini glass to remove ice shards and any seeds from the passionfruit juice.
Garnish and finish
Float about 1 oz of chilled dry champagne or prosecco on top if using (pour gently over the back of a spoon). Spoon half a passionfruit's pulp into the center of the drink, or place half a passionfruit shell with pulp on the surface. Scrape a few seeds from 1/4 of a vanilla bean over the top for aroma and a vanilla fleck. Add a lime wheel or zest to the rim if desired.
Serve
Serve immediately while effervescence (if using) is lively and the drink is cold.
Optional / Notes
Vanilla syrup: to make quickly, split 1 vanilla bean and scrape the seeds into 1 cup simple syrup (1:1 sugar to water), heat gently with the pod for 10 minutes, cool and strain. Use 0.5 oz per cocktail as specified.
Falernum: provides spice and almond/citrus notes. Adjust to taste (0.5–1 oz) depending on sweetness and intensity of your bottle.
If fresh passionfruit juice is unavailable, use 1 oz passionfruit puree + 0.5 oz water and fine-strain to remove pulp, adjusting sweetness accordingly.
