Prepare glass

Chill an old-fashioned (rocks) glass by filling it with ice water while you build the cocktail, or place it in the freezer for several minutes.

Add the blended Scotch whisky, amaro (Averna or Montenegro), sweet vermouth and orange bitters into a mixing glass.

If you prefer a slightly sweeter, rounder drink, add the optional 0.25 tsp simple syrup. This is optional because many amari already provide sufficient sweetness.

Fill the mixing glass with plenty of ice (enough to chill without diluting too quickly). Stir gently but thoroughly for 20–30 seconds, until the mixture is well chilled and slightly diluted (about 20% dilution typical for stirred spirit cocktails).

Discard the ice water from the chilled rocks glass and add 1–3 large ice cubes to the glass (one or two large cubes preferred).

Strain the stirred cocktail into the prepared rocks glass over the large ice cube(s).

Express the oils of an orange twist over the surface of the drink by holding the twist over the glass and gently pinching it to release oils, then rub the peel lightly around the rim and drop it into the glass as a garnish.

Serve immediately.
