Method
Mango Sorbet Base
Prepare mango puree
Peel and pit 3–4 large ripe mangoes (or use frozen mango chunks thawed). Chop and place in a blender. Blend until completely smooth, scraping down sides as needed, to yield about 4 cups of puree.
Make a simple syrup
In a small saucepan, combine 1 cup water and 3 tablespoons sugar. Warm over medium heat, stirring until sugar dissolves and mixture is clear. Remove from heat and cool 10 minutes.
Combine base
Stir the cooled simple syrup into the mango puree. Add 2 tablespoons fresh lime juice, 1 teaspoon lime zest, and 1 teaspoon fine sea salt. Taste and adjust: if it needs more brightness, add up to 1 more tablespoon lime juice; if too sharp, add up to 1 additional tablespoon sugar dissolved into a tablespoon of warm water.
Chill mixture
Cover the bowl and refrigerate the mango mixture until thoroughly cold, at least 2 hours (or up to overnight). Chilling improves texture when churning.
Churn
Once chilled, pour the mango mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency (typically 20–30 minutes).
Firm up
Transfer the churned sorbet to a shallow airtight container, press a piece of parchment or plastic directly on the surface to minimize ice crystals, and freeze until firm, at least 2–4 hours.
Finishing & Garnish
Serve with Tajín and lime
Scoop sorbet into serving bowls or chilled glasses. Lightly dust each scoop with a pinch (about 1/2 teaspoon) of Tajín per scoop; total Tajín used is about 2 teaspoons for 6 servings. Garnish with a lime wedge and a couple of mint leaves if desired. Offer extra Tajín and lime on the side so guests can adjust to taste.
Storage
Keep leftover sorbet in an airtight container in the freezer up to 2 weeks. Let sit at room temperature 5 minutes before scooping for easier serving.
