If you want a spicy rim, run a lime wedge around the glass lip and dip the rim into Tajin or chili-salt. Chill the serving glass (rocks or coupe) in the freezer for a few minutes.

If using whole passion fruit, cut one in half and scoop out pulp, then strain lightly to remove seeds if you prefer a smooth texture; measure 1 oz of strained pulp or juice.

Combine ingredients

In a cocktail shaker, add 2 oz reposado tequila, 0.75 oz spicy Aperol, 0.5 oz orgeat, 0.5 oz Cherry Heering, 1 oz passion fruit, 1 oz pineapple juice, 0.5 oz fresh lime juice, and 0.25 oz agave syrup (if using).

Add ice and bitters

Fill the shaker with ice (enough to nearly full). Add 1 dash Angostura bitters if using. The bitters add depth and help balance the sweetness.

Shake vigorously

Shake hard for 12–15 seconds until the outside of the shaker is very cold and well-chilled. This both chills and dilutes the cocktail to the proper strength.

Strain & Serve

Double-strain (using a Hawthorne and fine mesh strainer) into the chilled rocks or coupe glass over fresh large ice (if serving on the rocks) or without ice (if serving up). Double-straining removes pulp and small ice shards for a smoother sip.

Garnish with a pineapple wedge and a Luxardo cherry skewered together. Add a dehydrated orange wheel on the rim if desired. Optionally, spray a very light mist of pineapple juice over the top for aroma.

Serve immediately. Encourage the guest to stir lightly before sipping if the orgeat has settled.
