Warm the dairy

In a medium saucepan, combine 2 cups whole milk, 1 cup heavy cream, 3 tablespoons granulated sugar, 1 tablespoon glucose (or light corn syrup), and a pinch of fine sea salt. Warm over medium heat until the mixture is steaming and small bubbles form at the edges, stirring occasionally to dissolve the sugar (do not boil).

Whisk yolks

While the dairy warms, place 4 egg yolks in a heatproof bowl and whisk until smooth and slightly pale.

Temper yolks

Slowly ladle about 1/3 cup of the hot milk mixture into the yolks while whisking constantly to temper. Then slowly whisk the tempered yolks back into the saucepan with the remaining milk mixture.

Cook custard

Return the saucepan to medium-low heat and cook, stirring constantly with a heat-resistant spatula or wooden spoon and scraping the bottom, until the custard thickens slightly and coats the spatula (custard should reach about 170–175°F / 77–80°C). Do not let it boil.

Strain and cool

Remove from heat and immediately pour the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Stir in 1/2 teaspoon vanilla extract. Let cool for 10 minutes at room temperature, stirring occasionally to release steam.

Add espresso

Stir the freshly brewed double espresso (about 60–80 ml / 1/4 cup) into the warm custard. If you want a stronger coffee note, dissolve 1 teaspoon instant espresso granules into the custard as well. Taste and adjust: the mixture will taste more intense before freezing; keep it assertive but not bitter.

Chill thoroughly

Cover the custard bowl with plastic wrap, pressing the wrap onto the surface to prevent a skin from forming. Refrigerate until completely cold, at least 4 hours or preferably overnight. Proper chilling improves texture.

Churn

Once fully chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-gelato consistency (typically 20–30 minutes). If using optional chocolate, add the 2 tablespoons finely chopped dark chocolate in the last 2–3 minutes of churning to create chocolate bits.

Harden

Transfer the churned gelato into a shallow, airtight container, pressing a piece of parchment or plastic wrap directly onto the surface to minimize ice crystals. Freeze for at least 2 hours to firm up to scoopable gelato texture.

Serve

Remove from freezer 5–10 minutes before serving to soften slightly. Serve scoops in small bowls or espresso cups for an intense coffee treat. Garnish with extra chocolate shavings or a dusting of espresso powder if desired.
