Chill a rocks glass (or coupe) by filling it with ice and setting aside while you build the cocktail.

In a mixing glass, add 1.5 oz Cynar, 0.75 oz sweet vermouth, and (if using) 0.25 oz dry orange liqueur.

Add 2 dashes of Angostura bitters to the mixing glass.

Fill the mixing glass with large ice cubes (about 3) and stir gently for 30–45 seconds until well chilled and slightly diluted (the spoon should feel cold and the liquid slightly viscous).

Discard the ice from the chilled serving glass and strain the cocktail into the glass using a julep or Hawthorne strainer. Serve over a single large clear ice cube in a rocks glass or neat in a chilled coupe.

Garnish

Express the oils of an orange peel over the surface of the drink by holding the peel skin-side down 2–3 inches above the glass and giving it a sharp twist, then rub the peel rim on the glass and drop it into the drink (or discard if you prefer).
