Warm the dairy

In a medium heavy-bottomed saucepan, combine 2 cups whole milk and 1 cup heavy cream. Add 3 tablespoons granulated sugar, 2 teaspoons invert sugar (or light corn syrup), and a pinch of fine sea salt. Warm over medium heat until steam rises and tiny bubbles appear at the edge, stirring to dissolve the sugars (do not boil).

Temper the yolks

While the milk warms, whisk 4 egg yolks in a bowl until smooth. When the milk is warm, ladle about 1/3 cup of the hot milk into the yolks while whisking constantly to temper. Repeat with another 1/3 cup to gradually raise the yolks' temperature.

Cook the custard

Pour the tempered yolk mixture back into the saucepan with the remaining milk. Cook over low-medium heat, stirring constantly with a heatproof spatula or wooden spoon, scraping the bottom, until the mixture thickens slightly and coats the back of the spoon (temperature about 170–175°F / 77–80°C). Do not let it boil.

Strain and chill

Immediately pour the custard through a fine-mesh sieve into a clean bowl to remove any cooked bits. Cool the custard quickly by placing the bowl in an ice bath; stir occasionally until it reaches room temperature (15–20 minutes).

Fruit purée (berries or stone fruit)

If using fresh berries or diced stone fruit (1 cup): place fruit and 1 tablespoon of water in a small saucepan with 1 teaspoon sugar (if fruit is not very sweet). Cook gently 3–5 minutes until softened. Off heat, stir in 1 tablespoon chopped herb or 1 teaspoon lemon zest if using. Purée with an immersion blender or food processor until smooth. Taste and sweeten with up to 2 teaspoons honey or maple syrup if needed. Strain through a fine sieve if you want a very smooth texture.

Pumpkin or squash

If using roasted pumpkin/squash purée (1 cup): warm the purée in a small pan with a pinch of salt, 1 teaspoon ground spice if desired (cinnamon or cardamom), and up to 1 tablespoon honey or maple syrup. Stir until homogenized and warm; cool slightly before incorporating.

Infuse with herbs or zest

For a delicate herb note, bruise 1 tablespoon herb leaves and stir into the warm custard for 10–15 minutes, then strain out before chilling. For citrus aroma, add 1 teaspoon lemon (or citrus) zest directly into the warm custard before cooling.

Finish & Churn

Combine custard and purée

Once the base custard is cooled to room temperature, stir in the prepared seasonal purée (about 1 cup). Mix thoroughly to incorporate. Taste and adjust sweetness with up to 2 teaspoons honey or maple syrup. If using herbs, remove leaves or strain now.

Chill thoroughly

Cover the mixture and chill in the refrigerator for at least 4 hours or overnight. Proper chilling improves texture and allows flavor meld.

Churn

Set up an ice cream maker according to manufacturer instructions. Churn the chilled mixture until it reaches soft-serve consistency (typically 20–30 minutes). If adding small mix-ins (toasted nuts or chocolate shavings), add them in the last 3–5 minutes of churning so they distribute evenly.

Harden

Transfer gelato to a shallow, airtight container, press a piece of parchment directly on the surface to prevent ice crystals, and freeze for at least 2–4 hours to firm up to scoopable texture. Gelato is best served slightly warmer than ice cream — let sit 5–10 minutes at room temperature before serving.

Optional Garnish

Serve scoops topped with 1 tablespoon toasted chopped nuts and/or 2 teaspoons dark chocolate shavings. Finish with a light sprinkle (about 1/4 teaspoon) of flaky sea salt or a drizzle of extra honey/maple if desired.
