Prepare and combine

Add Lyre's Non‑Alcoholic Amaretti (2 oz), fresh lemon juice (0.75 oz), simple syrup (0.5 oz) and egg white (1 whole egg white, optional) into a cocktail shaker without ice for a dry shake. Add 2 dashes of orange bitters.

Dry shake

Seal the shaker and shake vigorously for 15–20 seconds. This emulsifies the egg white and builds a silky foam if using egg white.

Wet shake

Add a generous handful of ice (about 1 cup) to the shaker. Shake again vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.

Strain and serve

Double strain the cocktail into a chilled rocks glass filled with fresh ice (or serve neat in a coupe if preferred). Double straining (through a Hawthorne and fine mesh) removes small ice shards and yields a smoother texture.

Finish

Garnish with an orange slice or twist and a maraschino cherry on top of the foam (if egg white used). Optionally express an orange peel over the drink to release oils before garnishing.
