Prepare the Breakfast Potatoes

Cook the Potatoes

In a large skillet, heat olive oil over medium heat. Add the diced potatoes, garlic powder, paprika, salt, and pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Sauté the Mushrooms and Onions

In a separate skillet, heat olive oil over medium heat. Add the sliced onions and cook until translucent, about 5 minutes. Add the smoked mushrooms, salt, and pepper, cooking for an additional 5-7 minutes until the mushrooms are tender.

Poach the Eggs

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then carefully slide it into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on a paper towel.

Assemble the Benny

Toast the English muffins and place them on plates. Top each half with the sautéed mushrooms and onions. Place two poached eggs on top of the mushrooms, and drizzle with hollandaise sauce. Serve immediately with breakfast potatoes on the side.
