Prep and marinate

Pat fish fillets dry with paper towels. In a shallow dish combine lime juice, minced garlic, olive oil, salt, pepper and smoked paprika. Place fillets in the marinade, turning to coat. Let sit 10–15 minutes while you prepare other components. If using the blackened option, mix the blackening spices in a small bowl and press onto both sides of the fish after marinating (lightly pat to adhere).

Cook options

Choose a cooking method: - Grill: Preheat grill or grill pan to medium-high (about 400°F/200°C). Oil the grate. Grill fillets 3–4 minutes per side (depending on thickness) until opaque and flaky. - Blacken (pan-sear): Heat a heavy skillet (cast iron) over high heat with 1 tbsp oil until shimmering. Sear fish 2–4 minutes per side until a dark crust forms and fish is cooked through. - Fry: Follow the Fry Breading section to bread and deep/shallow fry the fish to golden brown and cooked through (internal temp 145°F/63°C).

Blackening Spice (optional)

Combine chili powder, cumin, onion powder, dried oregano and cayenne in a small bowl. Use as a dry rub to coat the fish after the initial lime marinade if you want a spicier, smoky blackened profile. Quantity provided is enough for 1 lb fish; adjust to taste.

Bread the fish

Set up three shallow bowls: 1) flour + cornmeal + salt + pepper; 2) beaten egg mixed with milk; 3) reserved flour bowl for double-dust if desired. Dredge each marinated fillet in dry mix, dip into egg wash, then back into dry mix, pressing to adhere.

Fry

Heat vegetable oil in a skillet to 350°F (175°C) — about 1/2 to 3/4" depth for shallow frying. Fry fillets in batches 2–4 minutes per side until golden and crispy and internal temp reaches 145°F (63°C). Transfer to a wire rack or paper towel-lined plate to drain and keep warm.

Make the sauce

In a bowl whisk together mayonnaise, Greek yogurt (or sour cream), minced pickled jalapeños, jalapeño juice, minced chipotle (if using), lime juice, honey, garlic powder and salt until smooth. Taste and adjust heat or acidity with more jalapeño juice or lime. Refrigerate for at least 10 minutes to let flavors meld.

Prep toppings

Thinly slice tomato and finely shred cabbage. Toss cabbage with a pinch of salt and 1 tsp lime juice if you want a slightly softened, bright slaw. Chop cilantro if using.

Toast buns

Heat a skillet over medium, spread butter or brush oil on the cut sides of buns (or warm tortillas). Toast cut sides 1–2 minutes until golden.

Assemble sandwiches

Spread about 1–2 tbsp of the spicy jalapeño sauce on the bottom bun or tortilla. Place the cooked fish fillet on the sandwich, top with a generous handful (about 1/2 cup) of shredded cabbage, 1–2 slices of tomato, a drizzle (or dollop) of extra sauce, and cilantro if desired. Finish with the top bun. Serve immediately with lime wedges.
