Cook the Chorizo

In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Drain excess grease and set aside.

Prepare the Eggs

In a bowl, whisk together the whole eggs, salt, and black pepper until well combined.

Cook the Omelet

In the same skillet, pour the egg mixture and cook over medium heat. Allow the eggs to set on the bottom before gently lifting the edges with a spatula.

Add Filling

Once the eggs are mostly set, add the cooked chorizo and asadero cheese on one half of the omelet.

Fold and Serve

Carefully fold the omelet in half over the filling and cook for an additional minute until the cheese is melted. Serve topped with pico de gallo and sliced avocado.
